Combine the butter with the dry ingredients. Use the reverse-creaming method: mix cubed butter into the dry mixture until it resembles coarse sand. This produces a tender, moist crumb.

Add the wet ingredients in two additions. Mix in half the wet ingredients until the flour is moistened and the batter is pasty. Scrape the bowl, then mix in the remaining wet ingredients until smooth and fully incorporated.

Divide the batter into two 8-inch pans and bake. Grease the sides and line the bottoms with parchment for easy release. Bake until the edges are golden and a toothpick comes out with a few moist crumbs.

Cool the pans on a wire rack. Let the cakes rest in the pans for about 30 minutes, then remove them and cool completely on the rack before assembling.

Prepare the lemon curd. You can make the curd ahead of time or while the layers bake. Cook the curd gently until thick, then strain and chill. Covering the surface with plastic prevents a skin from forming.

  • 1/2 cup granulated sugar
  • 1 tablespoon + 1 teaspoon fresh lemon zest
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • Pinch fine sea salt
  • 6 tablespoons cold unsalted butter, cubed
  • 1 teaspoon vanilla extract

  • 1 1/2 cups granulated sugar
  • 1 tablespoon fresh lemon zest, packed
  • 2 1/3 cups cake flour

  • 1/2 cup whole milk, room temperature

  • 1/3 cup vegetable oil
  • 2 tablespoons fresh lemon juice

  • 12 tablespoons unsalted butter, room temperature
  • 4 ounces cold full-fat cream cheese
  • 1 2/3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla bean paste or extract

Instructions (Summary)

  • For the curd: Rub lemon zest into sugar, whisk in eggs, then whisk in lemon juice and salt. Cook over medium-low, stirring constantly, until thick (about 170°F/78°C). Strain, stir in cold butter and vanilla, cover with plastic wrap on the surface, and chill.
