Gluten-Free Cucumber Sushi
Ingredients
- ¼ cup San-J 25% Less Sodium Tamari
- ¼ cup seasoned rice vinegar
- ½ teaspoon sesame oil
- 1 green onion, finely chopped
- 1 pinch red pepper flakes
- 1 pinch sesame seeds
- 2 large cucumbers
- 8 ounces cold cream cheese
- 1 (8-ounce package) gluten-free imitation crab
- 2 avocados, cut into strips

Instructions
-
Make the dipping sauce: combine the tamari, seasoned rice vinegar and sesame oil. Stir well, then divide into small dipping bowls and garnish with the chopped green onion, red pepper flakes and sesame seeds.
-
Prepare the cucumbers: cut each cucumber into thirds crosswise. Use a butter knife or small spoon to scoop out the seeds and create a hollow tube in each piece.
-
Fill the cucumber tubes: cut the cream cheese into long strips that match the cucumber lengths and press them into the cavities. Add strips of imitation crab, avocado and carrot. Once filled, slice each cucumber tube into rounds and arrange on a platter. Serve immediately with the dipping sauce.
