- ½ teaspoon coarse sea salt
- ½ teaspoon baking/bicarb soda
- 185 g (¾ cup) butter – melted
- 100 g (½ cup) light brown sugar
- 2 teaspoon vanilla extract
For the Fruit Mince Filling:
- 2 cups fruit mince meat – homemade preferred, or good-quality store-bought

Preheat the oven to 175°C (350°F) fan-forced.

Line a 20 x 20 cm (8 x 8 inch) baking dish with non-stick baking paper, leaving an overhang to lift the slice out easily.

In a medium bowl, mix the flour, rolled oats, salt and baking soda.

Melt the butter and combine with brown sugar and vanilla in a separate bowl.

Combine the wet and dry ingredients until evenly mixed.

Press about ¾ of the mixture firmly into the prepared tin, reserving roughly 150 g (5.2 oz) for the topping. Bake for 12 minutes or until pale golden.
