Ingredients
Tomato soup
- 1 tablespoon vegetable oil
- 1 shallot, finely chopped
- 1 clove garlic, minced
- 1¼ pound tomatoes, quartered
- 4½ cups vegetable broth
- 1 teaspoon sugar
- 1 sprig dried thyme
- salt and pepper, to taste
- 2 sprigs Fresh Parsley, chopped
Grilled cheese sandwich
- 4 slices white bread
- 2 tablespoons butter
- 2 slices Gouda cheese, or Cheddar
All recipes are available in Metric and US Customary units. Choose the system you prefer.
Instructions
Tomato soup
- Heat oil in a large pot.
- Add shallot and cook on low for 5 minutes until soft.
- Stir in garlic and cook for 30 seconds.
- Add tomatoes and fry for 1 minute.
- Pour in broth, add sugar and thyme.
- Bring to a boil, then simmer for 30 minutes.
- Blend until smooth and season with salt and pepper. Top with chopped parsley before serving.
Cheese Toastie
- Butter one side of each bread slice.
- Place cheese between slices with buttered sides out.
- Toast in a sandwich maker or in a pan until golden and the cheese is melted.
