Ingredients

Tomato soup

  • 1 tablespoon vegetable oil
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • pound tomatoes, quartered
  • cups vegetable broth
  • 1 teaspoon sugar
  • 1 sprig dried thyme
  • salt and pepper, to taste
  • 2 sprigs Fresh Parsley, chopped

Grilled cheese sandwich

  • 4 slices white bread
  • 2 tablespoons butter
  • 2 slices Gouda cheese, or Cheddar

Instructions

Tomato soup

  • Heat oil in a large pot.
  • Add shallot and cook on low for 5 minutes until soft.
  • Stir in garlic and cook for 30 seconds.
  • Add tomatoes and fry for 1 minute.
  • Pour in broth, add sugar and thyme.
  • Bring to a boil, then simmer for 30 minutes.
  • Blend until smooth and season with salt and pepper. Top with chopped parsley before serving.

Cheese Toastie

  • Butter one side of each bread slice.
  • Place cheese between slices with buttered sides out.
  • Toast in a sandwich maker or in a pan until golden and the cheese is melted.
