Tulip Run and DIY Lunch Workshop

One of my favorite signs of spring arrived this week: the tulips near Iwo Jima in Rosslyn. They’re always a mood booster and made an early morning run that much more special.

My friend Sokphal and I laced up our running shoes and headed out yesterday morning. It’s always a little hard to get out of bed, but once you’re moving the fresh air and scenery make it worth it.

We did our usual route into DC and back over Memorial Bridge, covering about three miles. We walked the final stretch and the big hill — not enough hill energy that morning, but the run felt great overall.

On the food front, I’ve been cycling through a few simple, satisfying lunches all week. One favorite was leftover steak with tzatziki, broccoli slaw, and black beans tucked into corn tortillas. The tzatziki I used was a plain yogurt blend with cucumber, dill, and garlic — fresh and cooling.

For a second round, I turned the same ingredients into a pita: steak, tzatziki, broccoli slaw, and arugula instead of beans. I’m really into tzatziki lately — it brightens up so many leftovers, and Riese seems to like it too, which is a bonus.

We also relied on rotisserie chicken for a few easy dinners. Some nights it went with roasted vegetables and potatoes or rice, and another night I made a simple grain bowl: orzo, rotisserie chicken, leftover salmon, peppers, tomatoes, chickpeas, feta, arugula, and a lemony vinaigrette. It was colorful, quick, and satisfying.

One midweek highlight: Matt and I decided to pretend it was Friday, ordered pizza, and watched a movie. I tossed together simple salads to go with it, which felt indulgent in the best way — no cooking, minimal cleanup, and both of us taking a break from work after dinner felt like a real treat.

And in toddler news: Riese seems to have finally warmed up to scrambled eggs. After not offering them for months, I tried again this week and she ate them happily — huzzah! On her plate that morning was leftover oatmeal mixed with beets and cinnamon, plus some Whole Foods guacamole, which remains a go-to favorite.
