About this recipe
I’ve made variations of this kielbasa hash for years. The idea originally came from a friend’s Pinterest board: kielbasa, olive oil, and sweet potatoes. I loved how the sausage flavor permeated the whole dish and required very little extra seasoning.
Over time I tweaked the recipe for everyday cooking. I switched to turkey kielbasa for a lighter option, found that sweet potatoes can take longer to cook, and reduced the oil used. The result is a lighter, easy version our family enjoys regularly.
I often serve pierogis alongside it and almost always top the hash with eggs. It’s one of my go-to meals for busy weeknights. It also reheats well, so you can make it ahead and warm it in the skillet or microwave.

Why turkey kielbasa?
Turkey kielbasa took me a while to try, but in my experience it tastes the same as traditional kielbasa when prepared this way. I use a specific brand, but the flavor profile is comparable to regular kielbasa once it’s browned in the pan. The turkey version is lower in calories and fat: roughly 100 calories (or 3 WW points) per 2 ounces versus higher values for traditional kielbasa.
Of course, use whichever kielbasa or smoked sausage your family prefers. Any similar cooked sausage will work fine.
How to make one-pan kielbasa hash
This is truly a one-pan dish cooked in stages, so choose a reasonably large frying pan with higher sides to contain everything.
Start by slicing the kielbasa into half-moon shapes. Dice the peppers and onions so they’re ready when you need them.
Preheat the frying pan over medium heat and spray lightly with olive oil. Add the kielbasa and cook for about 10 minutes, turning occasionally. The kielbasa is already cooked, so the goal is to brown the pieces and render flavor.
Remove the browned kielbasa and set it aside. Spray the pan again, then add the diced peppers and onions. Cook them about 10 minutes, tossing occasionally, and season with a pinch of kosher salt. Remove them from the pan when they’re softened and slightly caramelized.
Spray the pan again and add the shredded hash browns. Cook for 5–10 minutes, depending on whether they were frozen or fresh, until they turn golden brown and crispy. Season with a pinch of kosher salt.
Return the kielbasa, peppers, and onions to the pan and toss everything together until evenly combined and heated through.

How to serve
Based on the ingredient amounts below, a serving is about one cup, although that may vary by how large you dice the vegetables. The hash is excellent on its own, but adding runny over-easy eggs boosts protein and makes the dish more filling—break the yolk and mix it into the hash for a rich, comforting bite. That combination also makes the meal suitable for any time of day.

Instructions

Preheat a frying pan over medium heat.
