Corn… I love corn!

I make Instant Pot corn on the cob all summer long. It’s fast, simple, and always tasty.

Do you love corn as much as I do? I really do — fresh sweet corn is one of my favorite summer treats.

How to grill corn on the cob

After cooking the corn in the Instant Pot, you can finish the cobs on the grill for a few minutes per side to add a light char and smoky flavor. This step is optional but delicious when you want extra depth.

Quick question: do you eat corn right off the cob or cut the kernels off first? I usually cut the kernels off — braces for several years taught me that habit — but both ways are great.

Ingredients

  • 2–10 ears of corn, husked
  • 1/2 cup water
  • Butter
  • Salt & pepper

Instructions

  1. Husk the corn, remove the silky threads, and trim any blemishes with a small knife.
  2. Place the trivet in the bottom of the Instant Pot, arrange the corn on the trivet, and add 1/2 cup water.
  3. Lock the lid, set the valve to sealing, and select Manual/Pressure Cook for 0 minutes. The pot will take a few minutes to come to pressure and the corn will cook during that time.
  4. When the cook cycle ends, perform a quick release. Remove the corn and season with butter, salt, and pepper. Optional: finish on a hot grill for 2–3 minutes per side for a charred flavor.

Notes

*Setting the pressure cook time to 0 minutes is intentional: the Instant Pot still needs to come to pressure, and the corn cooks during that warm-up period.

*For extra flavor, briefly grill the cooked cobs — about 2–3 minutes per side — until lightly charred.
