When it comes to cheese, Brie tops my list. I adore its creamy texture and rich flavor so much that I can’t be trusted to keep it around — I’ll happily polish off a whole package. That’s why I usually buy it sparingly. Recently, though, I found a light Brie at Trader Joe’s and decided to try it. While it wasn’t quite as silky as the full-fat version, it was very close, melted beautifully, and offered a great flavor for significantly fewer calories and less fat. It seemed like the perfect choice for a lighter Brie and Apple Panini.
This low-calorie panini is incredibly simple to make, and the combination of tart apple and mild Brie is delightful. I used a Panini press, but if you don’t have one you can finish the sandwich in a toaster oven or a conventional oven — it won’t be exactly the same as a press, but it will still be delicious.
Each panini comes in at about 235 calories and is just 6 Points on the Weight Watchers plan, making it a smart option for a tasty, lighter lunch. Serve it with a crisp salad or roasted vegetables for a complete, satisfying meal.

Brie and Apple Panini Recipe

- 6 oz light Brie cheese
- 4 Panini rolls
- 1 small Granny Smith apple
