- 1/2 cup raw cashews
- 4 sun dried tomatoes
- 1 clove garlic
- 1/2 juice of half a lemon
- 1 pinch salt (optional)
- 1 hot pepper (optional)
Instructions

Place the cashews, sun‑dried tomatoes, garlic, lemon juice, and optional salt and hot pepper into a blender. Add just enough warm water to cover the cashews and tomatoes. Let the mixture sit for a couple of minutes so the tomatoes soften slightly. Blend until smooth, adding a splash of water if needed to reach a creamy consistency. Chill in the refrigerator before serving for best flavour and texture.
