Description

This Apple Cinnamon Paleo Bread combines nutty flours, warm spices and tender apple for a delicious breakfast loaf or satisfying snack.

  • 1 medium apple, finely diced
  • 1 cup almond flour
  • 3 tbsp coconut flour
  • 1 tbsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3 medium eggs
  • 2 tbsp honey
  • 1/4 cup melted coconut oil
  • 1/4 cup chopped pecans
  • Coconut oil spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a bread pan with coconut oil spray and set aside.
  3. In a large bowl, combine almond flour, coconut flour, cinnamon, baking soda and sea salt. Set aside.
  4. In a separate bowl, whisk eggs, melted coconut oil and honey. Pour the wet mixture into the dry ingredients and stir until smooth. Fold in the diced apple.
  5. Pour the batter into the prepared pan, sprinkle the pecans on top, and bake 30–40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the loaf to cool completely, then refrigerate for at least 2 hours for easier slicing.
