The first time I tried buckwheat waffles they tasted bland—almost like cardboard. That surprised me, but after a few tries my palate adjusted and now I appreciate their unique flavor. I top mine with fresh fruit, plenty of maple syrup, and some nuts depending on what I have on hand.

Ingredients

    cup
    ARROWHEAD MILLS BUCKWHEAT PANCAKE AND WAFFLE MIX
  • 1
    EGG
    beaten or an egg substitute
  • 1
    tbsp
    OIL
    melted coconut oil or olive oil suggested
  • 2
    tbsp.
    Pure Organic Maple Syrup OR 100% Organic Honey
  • 1
    cup
    Almond or Coconut milk
    use soy milk as a substitute
  • 1/2
    cup
    Gluten free oats
    choose organic, non-GMO gluten-free rolled oats if possible

Instructions

  1. Heat the waffle maker.
  2. Whisk or mix all ingredients until the batter is smooth and free of lumps.
  3. Brush the waffle iron with oil to prevent sticking.
  4. Pour batter onto the hot waffle iron and close the lid.
  5. Cook according to your waffle maker’s instructions until golden and cooked through.
  6. Serve warm with syrup or honey, fresh fruit, and nuts.

GF = Gluten Free, DF = Dairy Free. This recipe uses ARROWHEAD MILLS BUCKWHEAT PANCAKE AND WAFFLE MIX. If you prefer to make your own mix, substitute with ARROWHEAD MILLS BUCKWHEAT FLOUR and add 1/4 teaspoon salt, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda. I don’t often use mixes, but this one is non-GMO and USDA organic and worked well for these waffles. The flavor differs from traditional wheat waffles, so topping them with syrup or honey makes them more enjoyable. I purchased this product myself and was not sponsored.
