
The first time I tried buckwheat waffles they tasted bland—almost like cardboard. That surprised me, but after a few tries my palate adjusted and now I appreciate their unique flavor. I top mine with fresh fruit, plenty of maple syrup, and some nuts depending on what I have on hand.

Each serving contains about 40 g of whole grain and provides a good source of fiber. My kids ate these without noticing much difference, thanks to the banana, berries, and maple syrup I serve with them.

Instructions

Heat the waffle maker.

Whisk or mix all ingredients until the batter is smooth and free of lumps.

Brush the waffle iron with oil to prevent sticking.

Pour batter onto the hot waffle iron and close the lid.

GF = Gluten Free, DF = Dairy Free. This recipe uses ARROWHEAD MILLS BUCKWHEAT PANCAKE AND WAFFLE MIX. If you prefer to make your own mix, substitute with ARROWHEAD MILLS BUCKWHEAT FLOUR and add 1/4 teaspoon salt, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda. I don’t often use mixes, but this one is non-GMO and USDA organic and worked well for these waffles.
