Baked Peach Donuts — Dairy Free
Ingredients
- 1 ½ cup all-purpose flour
- ½ cup sugar
- 2 tsp baking powder
- 1 egg
- 1 cup Lifeway Oat (Peaches & Cream)
- ¼ cup coconut oil, melted (or butter)
- ½ cup peaches, diced (fresh, frozen, or canned—drained)
For the glaze
- ⅓ cup powdered sugar
- 2 tbsp Lifeway Oat (Peaches & Cream)
Instructions
- Preheat oven to 375°F and grease a donut pan well with coconut oil or cooking spray.
- In a large bowl, whisk together flour, sugar, and baking powder. Set aside.
- In a medium bowl, whisk the egg, Lifeway Oat, and melted coconut oil until combined.
- Add wet ingredients to the dry ingredients and stir gently; do not overmix. A few lumps are fine.
- Fold in the diced peaches until just combined.
- Transfer batter to a gallon-sized zip-top bag, snip a corner, and pipe into the prepared donut pan.
