A fresh spin on classic gluten-free apple crisp: Honeycrisp apples filled with gluten-free oatmeal cookies and finished with a warm caramel drizzle.
Apple Season
Fall brings more than pumpkin spice — it ushers in apple season. I love the variety and flavor of apples this time of year. While my daughter and husband prefer Jazz apples for snacking, Honeycrisp reigns supreme for desserts. Stuffed with a gluten-free oatmeal cookie mixture and baked until gooey, Honeycrisp apples become a show-stopping autumn treat.

Goodie Girl Oatmeal Raisin Cookies
I used Goodie Girl Oatmeal Raisin Cookies for the filling because their balance of oats, cinnamon, and raisins gives the ideal texture — slightly chewy with a light crisp. Paired with butter and brown sugar, the crumbled cookies transform into a rich, caramel-like filling as the apples bake.
Those stuffed apples remind me of a special Valentine’s Day years ago when my husband made baked stuffed apples for dessert. Coring and filling Honeycrisp apples, then baking them until they softened and the filling bubbled — it was unforgettable. Finding the right cookie to recreate that dessert led me to these oatmeal raisin cookies, and the result is just as delicious.

3 Steps to the Ultimate Fall Dessert: Gluten Free Apple Crisp
Making an inside-out gluten-free apple crisp is simple and impressive. Whether you’re preparing a single portion or a dessert for a crowd, the process breaks down into three easy steps.
Core the apples
If you don’t have an apple corer, a vegetable peeler or a small knife works well. After removing the core, use a spoon to scoop out and reserve the apple flesh you remove — you’ll chop and fold those pieces into the filling for extra texture and flavor.
Fill the apples
Combine crumbled oatmeal raisin cookies, brown sugar, melted butter, and the reserved chopped apple pieces. Pack the mixture into each cored apple, pressing down so the filling is compact. As you press, some of the butter and sugar mixture may begin to spill over — that’s okay; it will form a delicious caramel as it bakes.
Bake and admire your dessert
Bake the stuffed apples until the fruit is tender and the filling is bubbling. The apple juices combine with the brown sugar and butter to create a luscious caramel that you can spoon over each apple when serving. This dessert is simple to prepare but looks elegant and tastes indulgent — a guaranteed crowd-pleaser.
If you enjoy baked apple desserts, this inside-out gluten-free apple crisp is one of my favorites. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra-special finish. Happy gluten-free baking!
