Mini Fondant Cakelets: Bite-Sized Decorated Cake Recipes

There’s a small courtyard café my husband and I visit every week for brunch. We discovered this little gem about a year ago and instantly fell for its quiet charm. Tucked away yet consistently popular, the café is intimate with both indoor seating and a lovely outdoor courtyard. The courtyard has a simple, cottage-like appeal and each table is brightened by a small bouquet of fresh flowers, which adds to the welcoming atmosphere. The food is consistently good, but the desserts are exceptional. A favorite bakery from a nearby town brings fresh cakes, pies, cookies, and other decadent treats each morning, and more often than not, a few of those treats find their way home with us. Thinking about that café inspired me to create floral cakelettes—mini cakes topped with fresh flowers—perfect for a Mother’s Day brunch or a birthday celebration.

When Michaels invited me to try the Cake Boss line, I was excited. They sent boxes of baking supplies, including fondant, and I decided a cakelette would be a lovely project for Mother’s Day. The Cake Boss cakelette pan is ideal for small cakes that serve two to three people, or you can present each mini cake individually for a special touch.

Floral Cakelette For this project we used Cake Boss vanilla cake mix, vanilla frosting, and pink fondant.

Cakelette - diy After the cakes cooled, I leveled them to create an even surface. Running a serrated knife across the cakes while they were still in the pan helped achieve a straighter cut and made handling easier.

pink fondant - cakelette Next I rolled out the pink fondant and smoothed it over each cakelette. I’m still learning fondant techniques, so my finish isn’t perfect, but the cakes look charming and the fondant adds a clean, polished layer.

To finish each cakelette, I decorated the tops with fresh edible flowers. The floral accents create a delicate, seasonal look that’s perfect for a spring brunch or a special celebration.
