What we love about Billy Miner ice cream pie
We’re partial to Oreo cookies, so any dessert built around them gets our attention. The classic Billy Miner pie combines an Oreo crust, coffee-flavored ice cream, and a rich topping of hot fudge and caramel. It’s a delicious balance of crunchy, creamy and deeply chocolatey elements.
In our version, we dial up the decadence: we use a double Oreo layer, add a full fudge layer, and finish the pie with homemade whipped cream. The result is a memorable dessert that’s especially fun to make for special occasions.

What is Billy Miner ice cream pie?
Billy Miner pie is a frozen dessert that originated in Canada and became popular at The Keg Steakhouse & Bar. The pie is named after a historical figure, Billy Miner, who was a well-known train robber in Canada in the early 1900s. The restaurant honored that story with a signature dessert and several themed menu items.
The typical composition is an Oreo-based crust, a coffee or mocha ice cream filling, and a topping of chocolate and caramel, often finished with slivered almonds. It’s a decadent blend that’s both nostalgic and crowd-pleasing.

How to make Billy Miner ice cream pie
- Melt 1/4 cup of the butter in the microwave or on the stove.
- Combine the melted butter with crushed Oreo cookies until evenly moistened.
- Press half the cookie mixture into the bottom of a 10-inch pie plate to form a crust and chill in the refrigerator. Reserve the remaining cookie crumbs.
- Melt the remaining 1/4 cup butter with the unsweetened dark chocolate over low heat, stirring until smooth. Remove from heat.
- Stir in the granulated sugar, then slowly whisk in the evaporated milk a little at a time to avoid seizing. Continue whisking until smooth.
- Stir in the vanilla extract and let the fudge mixture cool to room temperature.
- Remove the chilled crust from the refrigerator. Spread softened coffee ice cream over the crust and smooth the top. Sprinkle the reserved crushed Oreos over the ice cream, then freeze until firm.
- When the ice cream is firm, spread the cooled fudge layer over it and return the pie to the freezer to set.
- Whip the heavy cream with the confectioners’ sugar until soft peaks form, then spread the whipped cream over the set fudge layer.
- Finish with sliced almonds and extra drizzles of caramel and chocolate sauce if desired. Store the pie in the freezer until ready to serve.

How to serve Billy Miner ice cream pie
When you’re ready to serve, take the pie from the freezer and let it sit at room temperature for a few minutes so it’s easier to slice. For clean slices, run your knife under hot water, dry it, and slice using a hot, dry knife between cuts.
