How to Make a Pear & Apple Puff Pancake

Preheat the oven to 425°F. Place 3 tablespoons of butter in a 10-inch cast iron skillet and heat in the oven until the butter melts, about 2 minutes. Carefully tilt the skillet to coat the bottom and sides with butter.

In a blender, combine 4 large eggs, 1 cup milk, 1 cup all-purpose flour, 1 tablespoon sugar, and 1/2 teaspoon ground nutmeg. Blend until smooth. Pour the batter into the hot skillet and bake until puffed and lightly browned, about 15–17 minutes.

Meanwhile, make the topping. In a large skillet over medium heat, melt 3 tablespoons butter. Add 1 (14 oz) package Crunch Pak® apple slices, 1 (12 oz) package Crunch Pak® pear slices, 3 tablespoons sugar and a sprinkle of cinnamon. Cook, stirring occasionally, until the fruit is tender, about 13–15 minutes.

When the pancake is done, remove it from the oven and spoon the warm fruit mixture into or over the center. Serve immediately with maple syrup and whipped cream if desired.
