
Dinnertime can get chaotic in a busy household. With three small children, someone is bound to get hangry in the hour before dinner—sometimes that’s me. When I need a fast, low-effort meal, salmon is my go-to. I keep a few fillets in the freezer and, with a quick thaw, dinner comes together in minutes. Pair it with roasted vegetables and a simple green for a balanced weeknight meal.
This lemon pepper salmon is one of my favorites because it’s fast, simple, and flavorful. Prep takes just minutes—enough time to preheat the oven—and the salmon bakes quickly, so dinner is ready before you know it.

Besides tasting great, salmon is also highly nutritious. It provides vitamin B12, vitamin D, selenium, niacin (vitamin B3), lean protein, and omega-3 fatty acids—nutrients that support overall health.

Lemon Pepper Salmon
Ingredients
- 1 lb wild-caught salmon fillet
- 1 tsp avocado oil, divided
- 1/2 lemon
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 green onions
- 1 tsp unsalted butter
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with foil.
- Pour 1/2 tsp avocado oil onto the foil and spread it to lightly coat the surface. Place the salmon on the foil and rub the remaining 1/2 tsp oil over the fillet.
- Season evenly with sea salt and black pepper. Squeeze a little lemon juice over the salmon and place the squeezed lemon half on the baking sheet. Arrange green onions over the fillet. Cut the butter into small pieces and distribute them over the salmon.
- Bake for 10–12 minutes, until the salmon is cooked through but still moist. It should be firm to the touch and slightly pink inside.
- Squeeze the cooked lemon over the salmon before serving for extra brightness.

- Bake 10–12 minutes, until the salmon is cooked through but still moist.
- Squeeze the roasted lemon over the salmon before serving.
