Ingredients
- 250 g Cream Cheese Softened, 8oz
- 1 Cup Almond Flour
- 1 Cup Desiccated Coconut
- 1/4 Cup Powdered Erythritol (sifted)
- 2 Tbsp Ground Ginger
- 2 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- 1 tsp Vanilla Extract
- 50 g Butter Melted (about half a stick)
- 1/4 tsp Salt
Instructions

Preheat the oven to 160°C (320°F).

In a medium bowl, combine the almond flour, desiccated coconut, spices, salt and melted butter. Stir until the mixture resembles wet sand or coarse crumbs.

Spread the crumb mixture on a rimmed baking sheet and bake for about 10 minutes, or until the crumbs begin to brown. Remove and let cool completely.

While the crumbs bake, beat the softened cream cheese with the vanilla and powdered erythritol in a large bowl with an electric mixer until smooth and fluffy.

Reserve 1 cup of the baked crumbs to coat the bites.

Stir the remaining crumbs into the cream cheese mixture until combined.

Chill the mixture in the fridge for about 1 hour to firm up slightly.

Using a small ice cream scoop or teaspoon, portion teaspoon-sized amounts of the mixture and roll into balls. Roll each ball in the reserved crumbs until fully coated. Repeat until you have about 30 bites.

Return the bites to the fridge to firm up. Store in an airtight container in the refrigerator.
