Ingredients
8 slices of bread
2 eggs, beaten
1/2 cup milk
A pinch of salt
Method
1. Prepare four sandwiches with your chosen filling.
2. In a shallow dish, whisk together the beaten eggs, milk, and a pinch of salt. Dip each sandwich briefly in the egg-and-milk mixture, coating both sides.
3. Heat a lightly oiled skillet or griddle over medium heat. Saute the sandwiches until golden brown on the first side, then flip and brown the other side. Use a slotted spatula for turning and transferring the sandwiches to a warm serving plate.
Yield: 4 servings.
Fillings
Egg and Ripe Olive Filling: Combine 3/4 cup chopped hard-cooked eggs, 2 tablespoons chopped ripe olives, 3 tablespoons mayonnaise, 1 1/2 tablespoons chopped green pepper, and 1/2 teaspoon salt. This amount is enough to fill four sandwiches.
Pineapple and Ham Filling: Mix 1 cup ground cooked ham, 1/4 cup drained crushed pineapple, 1 tablespoon brown sugar, 1 tablespoon mayonnaise, 1 tablespoon prepared horseradish, and 1/2 teaspoon Worcestershire sauce. This makes enough filling for four sandwiches.
