Many keto cracker recipes rely on almond or coconut flour and cheese. This version avoids nuts and dairy, making it suitable for people with allergies or sensitivities while still keeping the carb count low.
This recipe is a variation of a homemade vegan gluten-free cracker — adapted here to be nut-free and keto-friendly.

Vegan Seed Crackers With Psyllium
I use psyllium husk and ground flax as binders. Psyllium husk comes from Plantago ovata seed husks and swells when mixed with liquid, creating a gelatinous texture that replaces gluten’s binding role. I use the husks (not powdered), though you can grind them for a finer texture.
Psyllium is excellent for vegan keto baking because it thickens liquids and helps mimic the structure of baked goods without gluten.

As a nut-free alternative to almond flour I use tigernut flour. It’s grain-free and suitable for paleo, keto and AIP diets. Tigernut flour is milder than coconut flour, less starchy than cassava, and not made from nuts.
Fat contributes flakiness and crispness. I substitute butter with coconut cream for healthy fat, though quality vegan butter works well too.

Ingredients For This Vegan Keto Seed Cracker Recipe
- Golden flax seeds — ground (brown flax will make a darker cracker)
- Sunflower seeds — raw, unsalted, ground
- Sesame seeds — raw, ground
- Coconut cream — or a quality vegan butter
- Tigernut flour — or almond flour if preferred
- Apple cider vinegar — or lemon juice
- Dried onion — powder or flakes
- Psyllium husk — whole husks or ground powder
- Date sugar or maple sugar — optional, or a keto sweetener
- Sea salt
Topping
- Whole sesame seeds (white and/or black)
- Whole sunflower seeds or other seeds you like
How To Make Vegan Keto Seed Crackers
If your seeds are already ground, you only need a bowl to combine the ingredients. If using whole seeds, grind them finely with a coffee grinder or food processor first.
1. Grind whole seeds if needed so they form a smooth base for the dough.
2. Mix the coconut cream with apple cider vinegar and add the psyllium husk so it absorbs the liquid and forms a gel-like binder.

3. Combine dry ingredients with the coconut cream mixture. Stir until a thick dough forms.
4. On a sheet of parchment, press the dough into a flat square and smooth the edges.
5. Cover with another parchment sheet and roll the dough to about 1/8 inch (≈3 mm) thickness.
6. Trim rough edges and save scraps to re-roll.
7. Sprinkle the top with sesame and sunflower seeds, replace the parchment and press gently with the rolling pin so seeds adhere.
8. Transfer the sheet to a baking tray, cut into roughly 1.5–2 inch squares and prick each cracker with a fork.
9. Bake about 14 minutes total (see recipe card for exact temperatures and timing). Let cool completely to crisp up.

Pro Tip
If your kitchen is warm, chill the rolled dough in the freezer for 5 minutes to firm the coconut cream; it behaves like butter and helps the crackers hold their shape.
Vegan butter is a good substitute for coconut cream if you prefer.

Store completely cooled crackers in an airtight container at room temperature for up to a week. Keeping them fully cooled before sealing is essential to preserve crispness.

Ingredients
Keto Crackers: The Dough
- 1/2 cup ground golden flax seeds

- 1.5 tbsp whole sesame seeds (black and white)
- 1.5 tbsp whole sunflower seeds
Instructions
- Preheat the oven to 380 F (193 C).
Prepare The Ingredients
- Grind seeds for the dough if needed and combine them with the dry ingredients in a bowl.
- Mix coconut cream with apple cider vinegar and add psyllium husk. Let it absorb and thicken.
Form The Dough
- Combine the coconut cream mixture with the dry ingredients and mix until a dough forms. Let rest 10–15 minutes for the seeds to absorb moisture.
Form The Crackers
- Place the dough between parchment sheets and roll very thin (about 1/8 inch).
- Remove the top parchment, sprinkle with seeds, replace the parchment and press gently so seeds adhere. Cut into 2-inch squares without separating and prick each piece with a fork.
- Transfer the sheet to a baking tray.
Bake The Keto Crackers
- Bake at 380 F for about 7 minutes, rotate the tray and continue baking at 325 F (182 C) for another ~7 minutes. Watch closely to avoid burning.
- Let crackers cool fully on the tray, then break apart and store in an airtight container.
