- 8 ounces softened cream cheese
- 1 cup sour cream
- 1.5 tbsp taco seasoning
- 1 cup shredded Colby Jack cheese
- 1 cup canned black beans (drained and rinsed)
- 1 cup canned corn (drained)
- 1 cup diced tomatoes
- 1/2 cup sliced black olives
- cilantro or green onion for garnish
- tortilla chips for serving
Instructions
- In a medium bowl, beat together the softened cream cheese, sour cream, and taco seasoning until smooth and well combined.
- Spread the mixture evenly across the bottom of a small baking dish (an 11×7, 9×9, or a large pie dish works well).
- Sprinkle the shredded cheese over the base, then arrange the beans, corn, tomatoes, olives, and any other toppings you prefer in layers.
- Cover and chill until ready to serve. Serve cold with tortilla chips.
Notes
- Taste the cream cheese mixture before spreading. Adjust taco seasoning to avoid over-salting—some prefer less, others a bit more.
- Swap cheeses as you like: cheddar or pepper jack are great alternatives.
- Keep diced jalapeños or hot sauce on the side so children and more sensitive guests can enjoy the dip without too much heat.
- Quantities for toppings are suggestions—feel free to increase or decrease amounts to suit your preferences.
