Homemade Greek Yogurt Pancakes with Mixed Berry Compote
I recently made a small batch of Mixed Berry Compote and used the leftovers to top these Greek yogurt protein pancakes. The combination was one of the best breakfast decisions I’ve made recently — the tang of the yogurt pairs perfectly with the bright, fruity compote.
These pancakes are quick to prepare — about 30 minutes from start to finish — and they beat boxed mixes in both texture and flavor. Greek yogurt thickens the batter and yields extra-fluffy pancakes with a pleasant tang and added protein. You can swap all-purpose flour for whole wheat to make them heartier, or stir in flax seeds for more fiber. Fresh or frozen berries can be folded into the batter for more fruity bites.
If you prefer not to use Greek yogurt in the batter, the homemade mixed berry sauce also makes a fantastic topping for classic buttermilk pancakes or waffles.

Ingredients
- Dry Ingredients: All-purpose flour, granulated sugar, baking powder, and salt form the base of these simple pancakes.
- Wet Ingredients: Eggs, Greek yogurt, milk, and pure vanilla extract. Use any milk you prefer — whole milk, soy, almond, oat, or coconut all work.
- Cooking Oil: Canola or vegetable oil for greasing your griddle or skillet.
- Mixed Berry Compote: A simple mix of berries (fresh or frozen), pomegranate juice for depth and sweetness, and a touch of lime juice to brighten the flavor. Lemon juice can be substituted for lime if you prefer.

How To Make Mixed Berry Compote
This compote is intentionally simple — only three main ingredients and no added refined sugar. The natural sugars in the fruit and 100% fruit juice give it sweetness while keeping the flavor fresh.
Combine mixed berries, pomegranate juice, and lime juice in a small saucepan over medium heat. Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally, until the mixture thickens. Mash some of the fruit with the back of a spoon for body, but leave some whole pieces for texture. If you prefer a smooth sauce, mash or puree it completely.
Keep the compote warm while you finish cooking the pancakes so everything is ready to serve at once.

How To Cook Pancakes
- Make the batter: In a large bowl, whisk the dry ingredients — flour, sugar, salt, and baking powder. In a separate bowl, whisk the wet ingredients — eggs, Greek yogurt, milk, and vanilla. Add the wet mixture to the dry and fold gently until just combined. Avoid over-mixing to keep the pancakes tender.

- Cook the pancakes: Heat a skillet or griddle over medium heat and brush or wipe it with a little oil. Use a 1/3-cup measure for each pancake and pour the batter onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes, then flip and cook until golden, another 2–3 minutes.
- Continue cooking in batches until all the batter is used. Add a little more oil between batches if needed to prevent sticking.

- Serve the pancakes hot. They’re excellent plain, with butter and maple syrup, or generously topped with the warm Mixed Berry Compote for a bright, fruity contrast.
Variations
- Chocolate chips: Sprinkle some into the batter or onto the pancakes as they cook for a sweet treat.
- Chopped nuts: Add pecans or walnuts for crunch. A drizzle of granola butter or nut butter makes them even more satisfying.
- Peanut butter swirl: Slightly melt peanut butter and swirl it onto pancakes as they cook for PB&J vibes.

- In a separate bowl, whisk together the eggs, Greek yogurt, milk, and vanilla.
- Add the wet ingredients to the dry ingredients and fold gently. Do not overmix; a few lumps are fine.
- Heat a skillet or griddle over medium heat and add about 1 tablespoon of oil. Scoop 1/3 cup batter per pancake onto the hot surface. Cook until the edges look set and bubbles form on top, about 2–3 minutes, then flip and cook until golden, another 2–3 minutes.
- Repeat with the remaining batter, adding more oil between batches if needed. Serve immediately with butter and maple syrup or with the Mixed Berry Compote.
