Martinis are one of my favorite mixed drinks and this colorful Bikini Martini is near the top of that list. It combines tropical flavors with a pretty layered presentation that’s perfect for parties, summer gatherings or a relaxed evening at home.

Similar to a Malibu Sunset, the Bikini Martini blends coconut rum and vodka with pineapple juice and a splash of grenadine. With only four ingredients, it delivers a bright, tropical flavor and the look of a sunset in a glass.

Ingredients

  • 4 oz coconut rum
  • 3 oz vodka
  • 4 oz pineapple juice
  • 2 dashes grenadine

Garnishes

  • Pineapple chunks (optional)
  • Maraschino cherries (optional)

Instructions

  1. Combine the coconut rum, vodka and pineapple juice in a shaker with a couple of ice cubes. Shake firmly until well chilled.
  2. Strain the mixture into a chilled martini glass. Add a couple of dashes of grenadine in the center; the grenadine will sink and create a layered effect at the bottom of the glass.
