To get the sour apple note, the recipe uses three packets of apple cider drink mix, usually found near tea and hot cocoa mixes in grocery stores. The same apple cider mix works well in other fall treats like caramel apple snickerdoodles.

The stovetop portion of the recipe takes about 15 minutes; the fudge then needs about three hours in the refrigerator to set. This makes it convenient to prepare in the morning and serve later the same day.

No caramel apple fudge is complete without caramel — drizzle and swirl it into the white chocolate base for a delicious marbled effect.

  • ¼ cup (57 g) unsalted butter (1/2 stick)
  • 3 cups (129 g) mini marshmallows
  • ½ cup (99 g) granulated sugar
  • ½ cup (118 ml) heavy cream
  • 3 packets apple cider drink mix (0.74 oz each)
  • 3 cups (510 g) white chocolate chips
  • ½ cup caramel bits or caramel squares
  • 1½ Tbsp heavy cream (for the caramel)

How To Make Caramel Apple Fudge

  1. Line an 8×8-inch baking pan with two layers of tin foil, leaving an overhang for easy removal.
  2. In a large pot over medium heat, combine the butter, mini marshmallows, granulated sugar, ½ cup heavy cream, and the three packets of apple cider drink mix. Stir occasionally until the marshmallows melt and the mixture is smooth, about 8–10 minutes.
  3. While the marshmallow mixture cooks, melt the caramel bits with 1½ tablespoons heavy cream in a microwave-safe bowl. Heat at 50% power in 45-second intervals, stirring between intervals, until smooth. Set aside.
  4. Remove the pot from the heat and stir in the white chocolate chips until fully melted and the mixture is glossy.
  5. Pour the fudge into the prepared pan. Drizzle the melted caramel over the top and use a small metal spatula or knife to swirl the caramel into the fudge for a marbled look.
  6. Refrigerate for at least 3 hours until firm. Cut into small squares and store chilled for best texture.

How To Store Fudge

Store fudge in an airtight container in the refrigerator for 2–3 weeks.

To freeze: Wrap the whole block in two layers of plastic wrap, then place it in a freezer-safe bag.

To thaw: Keep the fudge wrapped and move it to the refrigerator to thaw overnight.
