These burgers are great for picky eaters because everyone can choose their own toppings. If someone at the table doesn’t eat meat, offer a cast-iron skillet mac and cheese or another vegetarian option instead.

Ingredients and Tools You’ll Need

Use the largest cast iron skillet you own so you can cook multiple patties at once. If you don’t have a skillet, any heavy frying pan that can get very hot will work. If you prefer fresh aromatics, substitute 1/4 cup of finely diced fresh onion for the dried minced onion and one minced garlic clove for the granulated garlic. Feel free to experiment with your favorite seasoning blend in place of the listed spices.

How to Make Cast Iron Skillet Burgers

Step One: Season

Place the ground beef in a large bowl. Add kosher salt, black pepper, dried minced onion, granulated garlic, and Worcestershire sauce. Gently mix until the seasonings are evenly distributed—avoid overworking the meat to keep the patties tender.

Step Two: Shape

Divide the meat into four equal portions and form each into an 8-ounce patty. Make the patties slightly larger than your buns—about ½ inch wider—because they will shrink as they cook.

Step Three: Cook

Heat a cast-iron skillet over medium-high heat until it is very hot and just beginning to smoke. Place as many patties in the pan as will fit without touching; cook in batches if needed. Cook the patties for 3–4 minutes on the first side, flip, top each with two slices of cheese, and cook another 3–4 minutes for medium. Remove to a plate and let them rest for 2–3 minutes before assembling.

Step Four: Assemble

Spread a thin layer of thousand island dressing or mayonnaise on the buns. Place 2–3 leaves of lettuce on the bottom bun, add a slice of tomato, top with the burger, spoon on a couple of tablespoons of caramelized onions, and finish with the top bun. Serve immediately while the cheese is melty.

Storage Instructions

Leftover burgers should be cooled to room temperature, then stored in an airtight container in the refrigerator. They will keep for 2–3 days.

Reheat gently in a 350°F oven for 10–15 minutes to preserve texture, or microwave briefly if you’re short on time. Freshly cooked burgers will always taste best, but leftovers work well in sandwiches or chopped into salads.

What to Serve with Cast Iron Skillet Burgers

These burgers pair nicely with classic sides. Try a potato salad, a crisp cucumber-and-onion salad, or simple oven fries. For drinks, a fruity cocktail or iced tea complements the meal, and a no-bake vanilla cream pie makes a refreshing finish.

Questions and Troubleshooting

Why is the cooking time so short?

Three minutes per side usually yields a medium burger. Cooking four minutes per side will bring you closer to medium-well. Many home cooks tend to overcook patties, so shorter cook times help preserve juiciness.

Why use a cast-iron skillet?

Cast iron holds and distributes heat evenly, producing a deep, flavorful crust without overcooking the interior.

Do I need to use a cast-iron skillet?

No. Any heavy-bottomed frying pan that can get very hot will work. The key is a hot surface for good browning.

What if I prefer thicker burgers?

Thicker patties require longer cooking. Use a meat thermometer to ensure the internal temperature reaches your desired doneness.

Can I use leaner ground beef?

Yes, but leaner beef will yield a less juicy burger. For the juiciest results, 80/20 is recommended.
